About Granulated Sugar
Sugar's 200 g/cup is the conversion that reveals why "a cup of dry ingredient" is meaningless — the same cup held 120 g of flour an entry ago. Caster (superfine) sugar runs slightly denser at 190 g; by weight all granulated sugars swap 1:1 in recipes. The 1-tsp figure (4 g) is the one cookie recipes actually use.
