Volume measures of dry ingredients vary ±20% with scooping technique — the "spoon and level" cup of flour runs 120 g, the scooped cup 150 g or more. Weight figures here reflect standard spooned-and-leveled measures; recipes that assume scooping will differ.
When a recipe provides weights, use them verbatim — they encode the author's actual testing. This database is the bridge for recipes that do not.
Accuracy of calculations
We implement well-known, publicly documented formulas (see the methodology section on each calculator page and USDA food composition data and standard baker measures as applicable). Even correctly implemented formulas produce estimates that depend on your inputs and assumptions. Real-world outcomes vary. Do not rely on a single web tool for a consequential decision.
