About Baking Soda vs Powder

Baking soda (sodium bicarbonate) releases CO₂ only when acid arrives — buttermilk, yogurt, molasses, brown sugar. Baking powder carries its own acid (double-acting: once on wet, once on heat). They are not 1:1 swappable: soda is 3–4× stronger, and swapping without adjusting the acid leaves soapy or flat bakes. Freshness: powder fizzes in hot water, soda in vinegar — test older tins.
